Each À la Mère de Famille marshmallow is made in an artisanal way, with carefully selected ingredients to guarantee you as much flavor as quality. In our workshop, our chocolatiers add a lot of tenderness to the making of our darling louloutres, each step of which is done by hand.
In cute otter-shaped molds, they pour the marshmallow obtained by delicately heating egg whites, water, sugar and fish gelatin (no pork gelatin in our marshmallows). The mixture continues to be beaten to add the natural vanilla flavors.
Once the marshmallow has cooled in its mold, each louloutre is sprinkled with icing sugar, before being sieved to remove the excess. The marshmallows are then placed on the coating belt, then covered with a generous coating of dark or milk chocolate depending on the recipe… and a second one to make sure they are well covered! They are finally stored in pretty boxes to arrive to you. All you have to do is taste them, closing your eyes to appreciate all their softness.

Why is marshmallow called marshmallow?
Simply because marshmallow, also called marshmallow paste or marshmallow paste, was made with the mucilage of the marshmallow root (Althaea officinalis by its little name), a plant substance that swells on contact with water and thus forms a material similar to gum. Marshmallow roots have been recognized since Antiquity for their antitussive power: they were eaten sweetened with honey against sore throats… and already also as confectionery! We find its trace in literature through the centuries, showing that it has always occupied a special place in the hearts of gourmands. Who had the good idea to invent the marshmallow?
In the 19th century, French confectioners (always on the right track!) tried using sugar instead of honey and beating the mixture to give volume to marshmallows. A few decades later, they innovated again by incorporating whipped egg white for the
lightness, gelatin for the fondant and softness, and rose water for the flavors. In the middle of the 20th century, an American patented an industrial process consisting of making a continuous cylinder of marshmallow paste, then cut into small pieces and rolled in icing sugar: the chamallow, or marshmallow, the American version of the marshmallow, was born. À la Mère de Famille, proud to perpetuate ancestral gourmet traditions, has reinterpreted with its know-how the different marshmallow recipes to offer you several chocolate versions, as well as marshmallows with fruits and flowers.
For the record, marshmallow is not only used for food and medicinal purposes. Its powder is also used to make a gelled paste, an ideal base for masks to beautify hair and revitalize dry skin. It really has everything to please us!
How are homemade chocolate marshmallows made?
It all starts with whipped egg whites, to which sugar, water and gelatin leaves are added, neither too early nor too late. The mixture is heated and then beaten until the softest texture possible. Depending on the recipe, you can also add syrup or natural plant flavourings (fruit, orange blossom, etc.), natural colourings, etc. The dough
The marshmallow obtained is poured into molds (in the shape of a bear, a heart or whatever you like) or into cylinders on a baking sheet, before being sprinkled with icing sugar.
In chocolate recipes, the marshmallows are then coated in a dark or milk chocolate coating.
How to eat chocolate marshmallow?
Like any treat, marshmallows are eaten... when you want them! Well, that's our gourmet opinion. The irresistible softness of our little ones goes wonderfully with your hot drinks, your fruity desserts... and can also be enjoyed very well on its own!
How to store chocolate marshmallows?
In addition to being delicious, our marshmallows are not complicated to live with. To keep all their softness and crunchiness, you just need to keep your strip or bag of marshmallows in a dry and cool place, at room temperature around 18°C, next to your chocolates, for example. Simple as candy, right?
